Bananas for this Girl!

After her nap yesterday, Caitlin asked for a 'nana. Usually I peel the banana and she takes a chunk off the top, returning once she has finished it for another chunk. Yesterday she had other plans...

We stopped at the public library on Saturday and I picked up a few cookbooks. I also dug out some of my old favorites and started a list of "Recipes to Try." I was good and started with the ingredients at home that were soon to go bad. The almost stale loaf of bread became french toast for breakfast. The bag of mini-pitas I bought for Caitlin that she didn't like? They are now tasty pita chops for her parents to enjoy. The dead bananas and cream cheese that was about to expire? They have been resurrected as Cream Cheese Banana Bread with Streusel Topping. Yum!

The Irishman wanted to try a recipe for Jerk Chicken a friend from work had given him so we prepped that for tomorrow night. I got to pick herbs from the garden to add to the marinade... I love that! We decided to let it marinade over night so we had Cheeseburger-Zucchini Pie for dinner. The Irishman didn't feel well last night, but he was kind enough to make a fuss over the meal!

Last night I also tried out a recipe for Tex Mex Snack Mix. I'm sure that we will be making that again! I think the only thing I didn't get to yet is the Salsa Chicken on the menu for later in the week.

 I think it is safe to say that the nesting has started...
